Avocado Chickpea Salad

The weather is getting warmer and it is beginning to be BBQ season time. I love a good fashion BBQ, but I never liked those side dishes like potato salad or cole slaw that is filled with mayo. I wanted to create a recipe that is fresh and flavorful to bring to all the upcoming BBQs this summer.

Avocado Chickpea Salad

Makes 8 servings

Ingredients:

1 can (15 oz) chickpeas, drained and rinsed
1/2 avocado, diced
1/2 tomato, diced
2 tbsp red onion, finely chopped
1 tbsp olive oil
sprinkle of salt and pepper, to taste

Directions:

Chop and measure out all ingredients. Combine in a bowl and toss together.

(How easy is that!?!)

Next time I make this, I think I’m going to add a little feta cheese too!

Enjoy!

  1. Just discovered you blog. Love all the recipes! That’s great that you’re making a career of your interest in nutrition. I’ve thought about what I could do in the social work field by way of doing that as well.
