The weather is getting warmer and it is beginning to be BBQ season time. I love a good fashion BBQ, but I never liked those side dishes like potato salad or cole slaw that is filled with mayo. I wanted to create a recipe that is fresh and flavorful to bring to all the upcoming BBQs this summer.
Avocado Chickpea Salad
Makes 8 servings
1 can (15 oz) chickpeas, drained and rinsed
1/2 avocado, diced
1/2 tomato, diced
2 tbsp red onion, finely chopped
1 tbsp olive oil
sprinkle of salt and pepper, to taste
Chop and measure out all ingredients. Combine in a bowl and toss together.
(How easy is that!?!)
Next time I make this, I think I’m going to add a little feta cheese too!
