Quinoa with mixed vegetables

This recipe was created by using up what I had on hand. I like getting creative and just grab whatever out of the fridge and pantry and making a meal out of it.

This recipe is very versatile. These are the frozen veggies I had in my freezer. You can add different veggies or add some chicken, tofu, etc. I like adding salsa to give it a kick of spiciness.

Quinoa is so versatile to work with. You could go either sweet or savory with it. I love quinoa because 1) it’s so easy and quick to make (15 min) and 2) it provides a good source of protein in this little grain (1 cup has 8 grams of protein)

  1. Ah, gotta love quinoa! It’s especially tasty if you boil it in some good vegetable stock, or squeeze a little lemon over 😀 This looks delicious, it’s fun making “student meals” of what you can find in the kitchen 😛
