This recipe was created by using up what I had on hand. I like getting creative and just grab whatever out of the fridge and pantry and making a meal out of it.
Quinoa with Mixed Vegetables
Makes 6 servings
1. Cook quinoa according to package directions.
2. While the quinoa is cooking, depending on type of frozen vegetables, put in boiling water until hot and tender, or put in the microwave according to package directions.
3. Throughly rinse and drain the can of beans.
4. When quinoa is done cooking, mix in your vegetables and beans.
5. Top with salsa.
This recipe is very versatile. These are the frozen veggies I had in my freezer. You can add different veggies or add some chicken, tofu, etc. I like adding salsa to give it a kick of spiciness.
Quinoa is so versatile to work with. You could go either sweet or savory with it. I love quinoa because 1) it’s so easy and quick to make (15 min) and 2) it provides a good source of protein in this little grain (1 cup has 8 grams of protein)
