Chocolate Protein Pancake

On the weekends, after I teach an hour spin class, I take the time to make a filling breakfast to refuel. I am not typically a pancake person, but these are a little different than your average pancakes. These pancakes have no grains, no dairy, protein packed, while sneaking in veggies!

Chocolate Protein Pancake
Makes 1 serving

1/2 banana
1/4 cup egg whites
1 scoop chocolate protein powder
1 tbsp ground flax seed
1 tsp cinnamon
2 tbsp almond milk
1 cup raw spinach


1. In a food processor combine all ingredients. Pulse all ingredients together until spinach is blended in.

2. Coat a pan with cooking spray and put over medium heat. Pour in your batter. You can make a few small pancakes or one big pancake.

3. Wait until the batter forms little bubbles before flipping. Cook until both sides are golden brown.

4. Enjoy as is, or add toppings like fruit, yogurt, peanut butter etc.
