I am always looking for quick and easy recipes that incorporates fresh vegetables from what I have on hand. I hate when recipes have a long list of ingredients, especially that aren’t common kitchen items. I like creating simple healthy recipes that have wiggle room for who is cooking to swap in or out ingredients that they like or what they have on hand.
Cucumber Tomato Couscous Salad
Makes 6 servings
1 box pearled couscous (I used Near East brand)
1/8 cup olive oil
2 tbsp lemon juice
2 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
2 roma tomatoes, chopped (use roma rather than globe for less water and seeds, which will cause your salad to be soggy)
1 cucumber, chopped
1. In a medium saucepan, combine 2 1/2 cups water, 1 tbsp olive oil and pearled couscous.
2. Reduce heat to a medium boil for 12 minutes or until water is mostly absorbed, stirring occasionally.
3. Cover and let stand for 5 minutes. Fluff with a fork.
(steps 1-3 are according to Near East’s package directions)
4. Mix in olive oil, lemon juice, thyme, parsley, salt, pepper, tomatoes, and cucumber.
