Lauren’s Paleo Zucchini Pancakes

I thought I would share a recipe from my friend Lauren’s blog: Cadillac Kitchen. I met Lauren last year at our first day of our dietetic internship. We have went through a crazy year together throughout our different rotations, long hours of homework, ranting and rambling about our successes and rough patches throughout the year. She is an amazing friend and a fabulous dietitian that cooks up creative Paleo recipes.

Lauren’s Paleo Zucchini Pancakes
Makes 1 serving (4 pancakes)



1/2 cup shredded zucchini
1 egg
1.5 tbsp almond meal
3 tbsp unsweetened almond milk
1 tbsp chopped pecans (or nut of choice)
1/8 tsp baking powder
1/8 tsp baking soda
1/4 tsp cinnamon
1/8 tsp all spice
stevia for sweetness (optional)

Chocolate Drizzle:
1/2 tbsp coconut oil liquid
1 tbsp Enjoy Life chocolate chips


1. Shred or grate zucchini into a small bowl. Add remaining pancake ingredients to a bowl and mix well. Spray a medium size frying pan with coconut oil spray (can be found at Trader Joes). Heat pan over medium heat. Drop large spoonful of mixture into pan to a desired pancake size. Allow to cook thoroughly before flipping (4-6 minutes depending how hot your pan is). Flip and cook on the second side.

2. Whole pancakes are cooking, place chocolate chips and coconut oil in a microwave safe bowl. Microwave for 15 seconds and stir. Microwave for an additional 10 seconds if needed. Repeat until all of the chocolate has melted.

3. Stack pancakes on a plate and drizzle with chocolate (or not, if you’re not feeling it). Maybe throw a few berries on top and enjoy!
