No Bake Pina Colada Bars

Recipe Redux – September 2013

This months recipe theme was “No Cook Desserts”. The raw food trend is sweetening things up with all sorts of treats from cocoa clusters and energy balls to puddings and panna cottas. No-cook usually means ‘super quick’ with few ingredients.

I’ve made No Bake Chocolate PB Bites before. I wanted to try and do something different for this recipe challange this month with still sticking to no bake, few ingredients, and easy to make. I was reminiscing about my vacation this summer and was thinking about those delicious pina coladas I enjoyed. With that in mind, I wanted to create a recipe that brought me back to lounging on the islands.

No Bake Piña Colada Bars

Makes 9 bars

 

Ingredients:

2 cups unsweetened shredded coconut
1 (8 oz) can pineapple, in it’s own juice, no sugar added
2 tbsp honey

Directions:

1. Combine all ingredients in a food processor. Process until all ingredients come together and coconut and pineapple are finely minced.

2. In an 8×8 container press down the mixture evenly into the dish.

3. Put the bars in the refrigerator for an hour before cutting into bars.

4. Store in the refrigerator.
