Butternut Squash and Kale Pizza

What do you do when you have leftover ingredients? I had a little bit of leftover roasted butternut squash, sauteed kale with caramelized onions, and a baked sweet potato to work with. Instead of just heating them back up for dinner, I got inspired by one of my favorite food network shows, Chopped, and decided to transform my ingredients. With my leftovers I created a Butternut Squash and Kale Pizza!

Butternut Squash and Kale Pizza
Makes 2 pizzas



2 pitas (can use pizza dough, flatbread, naan.. anything for a pizza crust)
1 baked sweet potato
2 tbsp chicken stock (can sub water)
1 tsp salt
1 tsp pepper
1 cup roasted butternut squash
1 cup sauteed kale with caramelized onions
1/2 cup part skim mozzarella cheese


1. Preheat the oven to 350 degrees F.

2. Remove the skin from the sweet potato. In a small food processor, puree the sweet potato with the chicken stock, salt, and pepper. Spread evenly on both of the pitas.

3. Assemble your pizzas by topping with the kale with caramelized onions, roasted butternut squash, and mozzarella cheese.

4. Bake in the oven about 5 minutes or until cheese is fully melted.
