{Sweetpotato} Baked Tater Tots

A childhood favorite, the classic tater tot, made healthier ~ Recipe created by Julie Harrington @RDelicious Kitchen

Have you heard of the sweetpotato that is taking the West coast by storm? The California sweetpotato (yes, that is not a typo.. sweetpotato is one word to set them apart) is different from the other sweet potatoes out there.

California Sweetpotatoes:

  • Are grown in small quantities in soft sand and are hand sorted.
  • Provide 4 grams of fiber, 2 grams of protein, and are a good source of Vitamin C.
  • You can get all the Vitamin A you need for the day in one medium sized sweetpotato – for only 105 calories.
  • Are sweet and moist compared to yams which are more dry and starchy.

The California Sweet Potato Council is sponsoring this Recipe ReDux recipe challenge and spreading the word about their sweetpotatoes.

 

{Sweetpotato} Baked Tater Tots
Makes 4 servings

Ingredients:

2 California Sweetpotatoes
1 egg
1/4 cup flour
1/2 cup panko
2 tsp salt
1 tsp pepper

Directions:

1. Preheat the oven for 425 degrees F.

2. Start prepping the sweetpotatoes by peeling them. With the help of a mandolin slicer, slice the sweet potato in very thin strips. (If you don’t have a mandolin, use your knife skills and cut the sweetpotato in thin strips.

3. Dice into a “brunoise cut“, which is a fine dice.

4. Steam the sweetpotato for about 2-3 minutes, until just tender. Set aside to cool.

5. In a bowl, whisk the egg. Combine the sweetpotato, flour, panko, salt, and pepper with the egg.

6. Using a tablespoon, scoop the mixture and shape into small cylinders.

7. Bake in the oven for 20 minutes or until crispy.

  1. Ahh tater tots! I have heard so much about them, yet never had a chance to try them, hmmm I might have to change this…especially after seeing this recipe! Do just serve them with ketchup, yeh? For some reason sweet chilli sauce also popped into my head, mmmm 🙂
    Almost sad I just had my tensies now! Although there is no chance I would have been able to make them here in work 😛

  2. I made these today! Used a purple sweet potato (which turned out to be white underneath its lovely purple skin (booo!) but they turned out great though! 😀 Will be up on my blog soon and I will of course link to this page 😀 Will definitely make these again, I just shaped them with my hands, halved the portion and got seven tasty bites out of it! x
