Crockpot Cornbread

Cornbread made in a crockpot? Yup, that happened! The Recipe Redux challenged their members to create a healthy recipe using a slow cooker/crockpot. I do not nearly use my crockpot as much as I should. It’s so easy to create healthy recipes, put them in the crockpot, step away for a few hours, and voila! your recipe is ready.

Crockpot Cornbread

Makes 8 servings



1 egg
1 1/2 cup milk
2 tbsp agave nectar (or honey)
2 tbsp butter, soften
2 cups cornmeal
1/2 cup whole wheat flour
cooking spray


1. Generously coat the crockpot with cooking spray.

2. In a medium bowl, mix together the egg, milk, agave nectar and butter.

3. Mix in the cornmeal and flour to the wet mixture.

4. Put the cornbread mixture in the crockpot and set on high for 2 hours. The edges will turn brown and a toothpick inserted to the center should come out clean.

This cornbread is denser than typical cornbread. This would be perfect to pair with a flavorful chili.
