{Raw} Oatmeal

One of my clients I cook for requested raw vegan meals this week. This was a fun challenge because it’s not an everyday meal plan I am used to cooking for. I did some research and came up with some raw vegan meals that I think my client will really enjoy this week. This particular client likes oatmeal, but hot cooked oats does not fall into the “raw” category. Not to worry, oat groats saved the day!

What are Oat Groats?

Oat groats are the hulled kernels from oat cereal grains. Groats are whole grains, because they all three parts, bran, germ, and endosperm, are intact. They are raw because they are not steam yet before being processed.

Steel cut oats are simply sliced oat groats.

{Raw} Oatmeal

Makes 4 servings



1 cup raw oat groats
3/4 cup raw walnuts
1 medium apple, peeled and chopped
1 tsp cinnamon
1/2 tsp nutmeg
Toppings: blueberries, pomegranate seeds, walnuts



1. In a bowl, combine the oats and walnuts. Fill bowl with water and allow the oats and walnuts to soak for at least 1 hour or overnight. The longer they are soaked, the creamier the consistency when blended.

2. Strain the oats and walnuts. In a strong blender, vitamix, or nutribullet, add the oats, walnuts, apple, cinnamon, and nutmeg. Blend until smooth. (May need a tbsp of water to help blend)

3. Top with blueberries, pomegranate seeds, and raw walnuts or a variety of fruits or raw nuts.
