Tomato and Bean Soup

Every winter I love creating new soup recipes. There is nothing better than warming up with a hot bowl of hearty soup on a cold winter day. I don’t know where all my blog followers are reading from, but in New Jersey this snow is getting out of control! There is more snow coming this afternoon too.

Warm up this winter with this hearty tomato and bean soup.


Tomato and Bean Soup

Makes 8 servings



3 (15 oz) cans low sodium vegetable broth
1 (15 oz) can cannellini beans, drained and rinsed
1 (15 oz) can tomato puree
1/2 cup onion, finely chopped
2 tomatoes, chopped
1/2 cup brown rice
2 cloves garlic, minced
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/2 tsp pepper
2 cups spinach, coarsely chopped



1. In a large crock pot combine all the ingredients except the spinach.

2. Cover and cook on low for 6 hours until heated through and rice is tender.

3. Stir in spinach and cook until wilted.

4. (Optional) Serve and sprinkle with parmesan cheese.

  1. This sounds delicious! 😀 Almost reminds me of the chorizo and chickpea soup I like to make. I usually refer to it as “pizza soup” because it has those lovely Italian flavours through it 😀
    The weather over there have better get better, cause I’m actually flying over to New Jersey myself (a Norwegian, who lives in Scotland, haha :P) at the beginning of March – so excited! I’ve been kept up to date by my friend who lives there, it sounds crazy! In the meantime…let’s have soup 😀 x
